Here’s a traditional Greek way to prepare green beans. Serve this as a side dish or a vegetarian meal or if you are fasting for Lent.
Here’s what you’ll need:
1/2 cup of olive oil
1 can of diced tomatoes
1 large onion chopped
3 stalks of celery chopped
2 cloves of garlic
1 tbsp of dried basil
1 tbsp of dried oregano
salt and pepper
water
and of course, 2 lbs. of green beans. I used frozen organic petite whole green beans.
Saute the onions and garlic in the olive oil.
Add the celery. Saute for a few minutes. Add the herbs and tomato sauce.
Add the green beans.
Add enough water to cover the beans. Bring to a boil. Reduce to a simmer, cover and cook about 30 minutes. Salt and pepper to taste. Serve with a slice of crusty bread!
