New site design for Kitoula’s Greek Food Journal

If you are trying to view my site via your smart phone or your tablet, I’m sorry if it’s not as responsive as it should be. I am currently working on a new site design for Kitoula’s Greek Food Journal so that my content looks great on every screen, no matter the size. Please bear with me and accept my apology.

If you are a “techie”, you may have heard about Google’s new algorithm. The algorithm, which starts tomorrow, will favor sites with mobile-friendly designs. Blogs that have large text, easy-to-click links, and that resize to fit whatever screen they’re viewed on will rank higher in search results.

Happy New Year 2014 – Lobster Alfredo

We usually have lobster for our New Year’s Eve dinner. This year we decided it might be nice to have Lobster Alfredo with linguine. It was delicious and easy to make. Here’s how…
Boil the lobster for 7 minutes, remove it from the water and let it cool. Once cool enough to handle, remove the lobster meat from its shells. Cut it into bite size chunks and set it aside.

Now melt butter in a large skillet. Add the sliced mushrooms to the pan and cook over medium heat for 3 minutes or until lightly browned. Pour in the cream, add the salt and pepper and cheese. Remember that the cheese is salty, so don’t over salt. Continue to heat this until the sauce just begins to bubble. Meanwhile, cook the linguine and drain it well. Add the linguine to the skillet and stir for 1 minute, until the sauce begins to thicken.

Add the lobster meat and toss gently. Serve immediately. Garnish with grated cheese and chopped parsley. We paired it with Freixenet, a sparkling wine similar to champagne, produced in Spain. A great way to bring in the New Year!

Easy Lobster Alfredo

Ingredients
  • Fresh lobster meat (two 2 lbs. live lobsters)
  • 8 oz. grated Parmesan cheese
  • 1 qt. heavy cream
  • ¼ lb. sliced mushrooms
  • Salt and pepper
  • 1 Box (16 oz) linguine
  • 3 oz. melted butter
Instructions

If you can, I ask that you give to this philanthropic cause in her name.

Kitoula’s Social Metrics

I have been working for an ad agency on a corporate “social good” project for a multinational brand. I am the project’s Community Manager and Blogger. I manage the project’s Facebook, Twitter and Pinterest profiles. I write articles for the website under a pen name and am the site’s content manager.

I have learned quite a bit about social metrics since working on this project, so I thought I might apply some of this knowledge to Kitoula.com’s social media. My numbers look miniscule compared to those I have been calculating for the project.

Here are the May numbers for Facebook. They are called ‘Insights’:

People Talking about my Page: 28
Fans who have engaged with my Page: 76
Total Reach or folks who have seen any content associated with my Page: 911
Total Impressions: 2,785
Friends of Fans or folks who are Friends with those who Like my Page: 1,740,291
[Wow! I guess my Fans have a lot of Friends!]
58% of my Facebook Fans are women between the age of 35 – 64.
