Baked Veggies – Tourlou Tava

I posted this recipe back in 2009 and it was a very popular post. My mother made it often and I have adapted this recipe from hers. It is easy to make and is perfect for Lent or for any vegan diet. Here’s what you’ll need:

1 medium zucchini
1 medium yellow squash
2 large potatoes or several small redskins
1 large onion
1 can of diced tomatoes
2 fresh tomatoes
6 cloves of garlic
1/2 cup of extra virgin olive oil (or vegetable oil if fasting for Lent)
Greek seasoning
4 cups of water
Bread crumbs
Bake in 350 degree oven one hour or until veggies are done.
Serves 4-6

    What a simple and delicious looking recipe. I’m going to give it a try as base for many of my dishes. I do believe however the Progresso Italian Flavored bread crumbs, as do many flavored bread crumbs, contain Parmesan cheese.

    1. Thanks Marty, I’m not sure about the Parmesan cheese ingredient, but I just checked and there are trace amounts of egg and milk in the bread crumbs. So, I suggest you omit them or make your own from scratch. They are easy to make in a food processor. Thanks again for your visit!

    1. Yassou Peter! You are so right! Fresh herbs…basil, parsley. My garden is just starting to come back to life after all the snow this past winter. I have tons of Greek oregano. It is more aggressive in my garden than mint! Weather permitting, I should have lots of photos of my herb garden by the end of May.
