Roast Leg of Lamb

1 leg of lamb
Salt and pepper
Oregano, parsley, basil
Lemon juice
Lots of garlic cloves

Make small slits in the fatty layer and insert a garlic clove in each.  Make a paste with lemon juice,  herbs, salt and pepper. Rub into meat. Roast in a 350 degree oven about 30 minutes per pound.
